Spring FORWARD Salad

Can it be Spring yet?

Weather has been a bit nuts in California lately. So if you're confused about what season you're in, don't worry. I think almost everyone is. Anyway, here is a great spring salad, because maybe if we eat in that season, it will magically be that season. 

Maybe not, but it tastes great and looks pretty. 

Spring Salad
organic Greenmarket greens (mixed blend)
edible flowers
1 blood orange, peeled/sliced into rounds
1 small carrot, sliced into dimes

Vegan Poppseed Dressing
makes about 1 cup (so you will have leftovers)

2 Tbsp Vegan mayo (aka, Vegenaise)
2 tsp spicy Dijon mustard
1 1/2 Tbsp olive oil
2 Tbsp apple cider vinegar
1 tsp lemon juice
1 Tbsp agave or maple syrup
1 tsp shallots, finely chopped
1 Tbsp poppy seeds
1/2 tsp garlic powder
dash pepper
